Scale by 3 is a growing Southern California-based restaurant group with operations in California and upcoming projects in Nevada, Texas and Utah. Our core team of three founded this company with the goal to continue to create and run successful, customer-focused restaurants.  Sx3 currently operates seven restaurants with four in development.

Broken Yolk Cafe

The Original Broken Yolk Café started in 1979 in Pacific Beach, a local beach community in San Diego, California and has since become a Southern California favorite for breakfast, brunch and lunch.

If you ask foodies why they love the Broken Yolk, they will most likely say, “Their signature benedicts and variety of menu options, mimosas (12 oz size!), homemade sauces, soups and baked goods and the most important SERVICE!  Broken Yolk is a full service restaurant that makes sure every guest has an egg-cellent experience!

Marufuku Ramen

Marufuku proudly serves the authentic Hakata-style Tonkotsu ramen — featuring milky and umami rich broth made from boiling pork bones for long hours, an ultra-thin artisanal noodles that match perfectly with the broth, and Cha-shu made from specially selected pork.

Marufuku Ramen is Sx3's most recent franchised brand. It is set to open in Las Vegas in 2024.

Taco Reforma

Taco Reforma is an original Sx3 concept set to serve authentic Mexico City-inspired street tacos in a fast-casual setting. Taco Reforma's chef was born and raised in Mexico and has incorporated his long-standing family recipes. All ingredients will be ethically sourced and presented in a way that honors the great Mexican tradition of tacos through the use of a trompo and comal. Key offerings are expected to be the delicious homemade birria and premium carne asada.

Taco Reforma will open in 2024 in a much anticipated dining hub in downtown Las Vegas.
